Greek Style Stuffed Peppers 





 Ingredients

  • 1 1/2 pounds of ground lamb
  • 1 whole onion, chopped
  • 1 tbsp basil
  • 4 tbsp oregano
  • 2 cloves garlic, chopped
  • Olive Oil
  • 1 (6) ounce can tomato paste
  • 6 red and green peppers, remove top and seeds
  • 1/2 pound of Orzo pasta
  • 2 tomatoes, diced
  • 8 ounces of feta cheese
  • Frozen spinach, thawed and drained
  • Salt and pepper to taste
  • Olive oil


Directions 

  1. In a medium-size pot, bring salted water to a boil over high heat. Cook the orzo pasta uncovered for around 8 minutes stirring often. Drain.
  2. In a large skillet heat 2 tablespoons of olive oil over medium heat. Add the onion and garlic and cook for a minute or two. Add the ground lamb, basil, oregano, salt, and pepper. Cooking 8 minutes until the lamb is browned. Remove from the heat. Add the orzo pasta, spinach, tomatoes, tomato paste, and feta cheese to the lamb mixture and mix well.
  3. Preheat oven to 400 degrees
  4. Rub the outside of the bell peppers with  2 tablespoons of olive oil. Season with salt and pepper. Arrange the peppers in a baking dish, fill the peppers with the lamb mixture and replace the tops.
  5. Bake at 400 degrees for 30 to 40 minutes.
