Greek Style Stuffed Peppers
Ingredients
- 1 1/2 pounds of ground lamb
- 1 (6) ounce can tomato paste
- 6 red and green peppers, remove top and seeds
- Frozen spinach, thawed and drained
Directions
- In a medium-size pot, bring salted water to a boil over high heat. Cook the orzo pasta uncovered for around 8 minutes stirring often. Drain.
- In a large skillet heat 2 tablespoons of olive oil over medium heat. Add the onion and garlic and cook for a minute or two. Add the ground lamb, basil, oregano, salt, and pepper. Cooking 8 minutes until the lamb is browned. Remove from the heat. Add the orzo pasta, spinach, tomatoes, tomato paste, and feta cheese to the lamb mixture and mix well.
- Preheat oven to 400 degrees
- Rub the outside of the bell peppers with 2 tablespoons of olive oil. Season with salt and pepper. Arrange the peppers in a baking dish, fill the peppers with the lamb mixture and replace the tops.
- Bake at 400 degrees for 30 to 40 minutes.
