Super rich and super moist. One of my favorite cakes to make.
Give it a try, you won't be disappointed.
Ingredients (cake)
- 2 cups of flour (All purpose)
- 1 cup unsweetened Hershey cocoa powder
- 2 cups sugar
- 1 and1/4 tsp salt
- 2 and 1/2 tsp baking powder
- 1 and 1/4 cup of coffee
- 1 and 1/2 cup sour cream
- 1 cup vegetable oil
- 3 eggs
- 2 cups of whole sour cream
- 1/4 cup light corn syrup
- 1 and 1/4 instant coffee or expresso
- 1- 15 ounce package of semi-sweet chocolate chips
- 3/4 tsp. Vanilla extract
- 1 cup of the icing
- 1 cup of heavy whipping cream
Ingredients (Icing)
- 15 ounces semi-sweet Hershey chocolate
- 1 and 1/4 teaspoon instant coffee or espresso
- 2 cups sour cream ( room temperature)
- 1/3 cup light corn syrup
- 3/4 teaspoon vanilla extract
Directions
- The oven should be preheated to 350 degrees.
- Grease and flour three 8 inch cake pans.
- In a large mixing bowl sift together the flour, salt, baking powder, and cocoa.
- In a separate bowl mix your wet ingredient (sour cream, eggs, oil, and coffee and whisk until incorporated.
- Mix the wet ingredients into your dry ingredients and mix well.
- Pour the cake batter into the three prepared pans.
- Bake for 30 to 35 minutes.
- Let cool for 15 minutes and remove from the pans.
Frosting
- Start by melting the chocolate chips over the lowest heat setting on the stove top. Add the instant coffee and stir. Remove from the heat and cool.
- In a separate bowl add the vanilla, sour cream, and corn syrup. Mix in the melted chocolate. Stir together, and taste to see if it is sweet enough if not, keep adding corn syrup until desired sweetness is achieved. The icing will thicken as it cools.
- To make the filling, take whipping cream and beat into peaks. Add a cup of the icing and mix gently until incorporated.
Assemble the cake
- Put one of the cakes on a plate, and put filling on top.
- Take another cake layer and put it on top of the filling.
- Take the last cake layer and place on top, and frost with the chocolate sour cream icing.
